Answering the question; "Where do I start?"
I should have been a teacher. I love providing information in a fun and interesting manner to anyone that needs encouragement. Being gluten-free is very traumatic for newly diagnosed gluten-intolerant, so I find that with humor and a positive attitude, people can see that being gluten-free is as easy as 1-2-3 if they do it the right way. I teach in a three step approach...
Step 1 - EliminationBefore anyone goes out and starts buying a bunch of gluten-free pre-packaged products I teach them the basics. Knowing what gluten is, what grains contain it and how to read labels is the first step to gluten-free living.

Step 2 - TransitionHaving a Good (GREAT) attitude, finding new foods to love and learning how to be prepared in and outside the home creates confidence. This confidence helps sufferers stay 100% compliant and feel better quickly and inexpensively without the need to cheat.

Step 3 - SubstitutionGluten-free foods can be very unhealthy if you choose the wrong ones. Choosing fresh, local and organic foods are easy to substitute into your diet, but knowing what tasty pre-packaged products are available on the market can save time and money.
